How To Make The Perfect Lamb Chops
INGREDIENTS
1- 1.5 lb of rib lamb chops
salt & pepper for seasoning
2 tbsp of olive oil
MARINADE
4 tbsp of olive oil (for marinade)
1 tbsp of oregano
1 tbsp of rosemary
1/2 tsp of mint (finely chopped)
1 tbsp of minced garlic
lemon wedges (to serve)
INSTRUCTIONS
Season lamb chops with salt and pepper generously
Prep marinade: mix all ingredients together in a small bowl
Rub the marinade over the lamb chops and let them set for 20 minutes at room temperature
Heat a large skillet over high and add olive oil. The skillet will be ready once the oil starts to shimmer. Reduce temperature to medium-high.
Place lamb chops on skillet and cook each side for approximately 3-5 min. They should reach an internal temperature of 135F (Rare)
Remove from skillet and transfer to a plate. Let rest for 3-5 minutes.
Squeeze lemon on top & enjoy!
My friend, Ralph Hertelendy, is the owner of Hertelendy Vineyards, and he challenged me to create something that would pair well with his Cabernet Franc. We both agreed that this would pair perfectly with a lamb recipe, so I decided to create what I consider to be the perfect lamb chops.
This recipe is very simple and anyone, even a beginner cook can make them.
I usually get the rib chop frenched so they are easy to hold when eating them, but that’s just my preference.
I recommend pairing this dish with a side of roasted potatoes along with a glass of Cabernet Franc, of course.
